Spinach & Ricotta Cannelloni with Pumpkin & Sage Sauce

Prep time: 10 minutes | Cook time: 35 minutes | Serves 4

INGREDIENTS

Filling:

250g organic frozen spinach, thawed

400g organic fresh ricotta, drained of excess liquid

1/3 cup (25g) organic grated Parmesan

1 clove organic garlic, crushed

1 organic, free-range egg

Salt and pepper to taste

Cannelloni:

12-14 organic dried cannelloni tubes 

400g packet of Australian Organics Food Co. Pumpkin and Sage Pasta Sauce

1 cup (100g) Organic Mozzarella, grated (or Cheddar or Tasty cheese)

METHOD

Filling:

  1. Place thawed spinach into a fine sieve or colander and push down to squeeze out excess liquid. Combine with ricotta, Parmesan, garlic and egg. Mix well and season to taste with salt and pepper. Spoon or pipe filling into cannelloni tubes.
  2. Preheat oven 200°C / 180°C fan forced

Cannelloni:

  1. Spoon ½ cup Australian Organics Food Co. Pumpkin and Sage Pasta Sauce into the base of large rectangular baking pan. Arrange filled cannelloni in a single layer. Pour over remaining sauce. Cover with foil and bake 25 minutes.
  2. Remove foil and sprinkle over Mozzarella. Cook, uncovered 10-15 minutes or until cannelloni is cooked and cheese is golden and melted. Stand 5 minutes before serving and enjoy!
