Pumpkin Mac & Cheese Recipe

Pumpkin Mac and Cheese Ingredients

375g pasta, short
50g butter
50g plain flour
150ml milk
1 cup of mozzarella, grated
1 cup of cheddar cheese, grated
1 x Australian Organic Food Co. Pumpkin and Sage Pasta Sauce
Bread crumbs, as desired
Grated parmesan, as desired
Mozzarella, as desired

 

Method

  1. Begin by boiling 375g of pasta in a pot according to the instructions on the package. Once it is cooked, drain the pasta and set it aside.
  2. In a pan, add 50g of butter and melt it over low heat.
  3. Once the butter has melted, add 50g of plain flour to the pan and stir until it is well combined with the butter.
  4. Gradually add 150ml of milk to the pan while continuing to stir, until the mixture is smooth and well combined.
  5. Add the Pumpkin & Sage Pasta Sauce to the pan and stir until it is evenly mixed with the milk mixture.
  6. Mix in the grated mozzarella cheese and stir until it has melted and is well combined with the sauce.
  7. Add the grated cheddar cheese to the pan and stir until it has melted and is well combined with the sauce.
  8. If the sauce is too thick, add a dash of milk to thin it out to the desired consistency.
  9. Once the cheese has melted and the sauce is stretchy, add the drained pasta to the pan and stir until it is evenly coated with the sauce.
  10. Transfer the pasta to a baking dish and sprinkle more grated cheese, parmesan and bread crumbs on top, as desired.
  11. Preheat your oven to 180 degrees Celsius and bake the pasta for 15 minutes or until a golden crust forms on top.
