Pear and Lemon Slice Recipe

Perfect for the warm weather – there’s no need to turn the oven on, this delicious recipe sets in the fridge. Made with nutritious ingredients like the Australian Organic Food Co. Pear, Peach and Nectarine fruit purée, almonds, and oats, this Pear and Lemon Slice is a not-so-naughty treat for adults and little ones to enjoy throughout the summer months.

 

BASE INGREDIENTS
1 cup oats
1 cup almonds
1/2 cup medjool dates (soaked in boiling water for 10 min)
1 tablespoon coconut oil (softened)
1 tsp vanilla extract
2 tablespoons date water

 

FILING INGREDIENTS

1 pouch of Australian Organic Food Co. Pear, Peach and Nectarine Fruit Purée
1 cup cashews (soaked overnight)
150g silken tofu (approx. 1/2 a packet)
1/2 a lemon juiced
1/4 cup maple syrup
1 medium pear, pealed and cored
3 tablespoons coconut oil (softened)
1 tsp vanilla extract

METHOD
1. Blend all of the base ingredients together, press into a tray lined with baking paper and place in the freezer.
2. Make the filling layer by blending together all of the filling ingredients until smooth, and the pour over the base. Set in the freezer for a few hours until set. Cut and store in the fridge.
